We also spoke with Jeremy Faludi, a sustainable-design strategist and analyst, about the environmental impacts of home soda makers versus store-bought soda. For the science behind carbonated water, we talked to Gavin Sacks, PhD, associate professor at Cornell University’s Department of Food Science.
Anna Perling has researched and written about soda makers for Wirecutter for a few years. She’s a longtime seltzer lover who, before she got a soda maker herself, was known for going through 12-packs of seltzer cans in just a few days. Jamie Wiebe, who wrote our 201review, has written about food and recipes for the likes of Men’s Journal and Eater. She also built a DIY soda maker for our original review.
How we picked
Soda makers work by injecting carbon dioxide into water to produce effervescence. You’ll find a lot of confusing labeling out there when it comes to bubbly water: While club soda and tonic water are bubbly, they have additives for flavor. Club soda has sodium or potassium salts; tonic water contains sweeteners and quinine, an ingredient originally used to treat malaria. Mineral waters can be naturally effervescent or have added carbon dioxide. The Food and Drug Administration defines soda water as carbonated water to which minerals and salts are added, while seltzer is the term for carbonated water with no additives. Technically, a soda maker creates seltzer.
Flaws but not dealbreakers
The Source doesn’t take the larger, 130 L SodaStream cylinders, so you’re stuck with purchasing the 60 L ones more often—but neither does the Power.
Note too that SodaStream will void your warranty if you carbonate anything other than water in its machines. Fizzing beverages such as juice or wine may also cause leaking or overflowing. Instead, to add flavor after carbonating water, you can buy sparkling-drink mix.
Currently SodaStream has seven models of soda makers, and we looked at them all before deciding which ones to test. SodaStream has discontinued many of its models (such as the Genesis, Pure, Fizz, Dynamo, Play, and Revolution) in an attempt to redesign. Here’s a breakdown of the rest of the SodaStream models we looked at:
We wanted to check out the Primo Flavorstation, but we confirmed with a company representative that it has been discontinued.
Keurig Kold: The concept behind the Kold was to make flavored soda using pods to carbonate instead of directly injecting carbon dioxide into water. We weren’t impressed with the soda from the Kold, and apparently other people weren’t, either: Keurig discontinued it a little over a year after we tested it.
Bonne O Sparkling Beverage System: The Bonne O, unlike any other soda maker we looked at, uses tabs of “citric acid, potassium bicarbonate, sodium bicarbonate (baking soda), potassium carbonate” to carbonate water instead of injecting carbon dioxide. The first four times we tested the Bonne O, the water was not carbonated and had a salty, sulphuric taste. Although the tabs go into a separate chamber and are not supposed to enter the water bottle, we could immediately tell from the water’s taste that they did. We also found the bottle difficult to attach and the machine cumbersome to clean. iSi Soda Siphon: We tested the iSi for the first two versions of this guide. It ranked the lowest overall among our taste testers in taste, bubble size, and overall fizziness of the water. Cleaning is also hard: To remove an inner chamber to clean the bottle, you need a special tool (and that’s something we’re sure we would lose in about two weeks).

With Home Made Soda You Are in Control
There’s another alternative, though: the beverages produced by home soda makers. When you make your own soda you have full control over the ingredients, so you can use recipes that eliminate all of the “bad” sweeteners and chemicals found in the majority of commercial sodas.
Homemade soda is the best way to minimize calories and carbs while creating a delicious beverage specifically crafted for your own taste buds.
Home Made Soda Is Better for the Environment and Cheaper
That’s not the only argument in favor of making your own pop. It’s environmentally-responsible, reducing the number of cans and bottles you must recycle (and preventing exposure to potentially-toxic chemicals in plastic soda bottles).
It allows you to control the amount of carbonation in your soda, lets you create a nearly-infinite variety of flavors, and gives the family a fun activity to enjoy together. Of course, those who still prefer good old-fashioned Coke or Pepsi can make the equivalent at home while saving money in the process.
Most soda makers aren’t very expensive, and they only require a few supplies: carbon dioxide or gas canisters for the fizz, special reusable bottles to hold the soda, and packaged or homemade flavorings.
The machines are easy to use and you can even tinker with them so they run off inexpensive-to-fill COtanks like those used for paintball. As you’ll see in our best soda maker reviews, most units are small and stylish so they can fit almost anywhere and be used whenever you get thirsty.
There are some product categories which are dominated by one or two manufacturers, and this is one. SodaStream is far and away the leader in the industry, so you’ll see one of their soda makers in our listings plus another that they’ve collaborated on. The Groom+Style review team has found some other good choices, though.
This is a compact home soda maker that takes up less space than a coffee-maker and looks a lot slicker, doesn’t have to be plugged in, and will cost less than the average family spends for soda in a month.
It’s available in black, red and white (the white one is a little cheaper and the other two colors are a bit more expensive) and will make a liter of pop in no time once it’s been loaded. If you’re a design aficionado, you may recognize the name Yves Béhar; he’s well-known for his sustainability projects and is the principal designer of the lovely plastic-and-metal Source.
This SodaStream model comes with a twin-pack of reusable BPA-free bottles which should last for a couple of years, a couple of the company’s SodaMix flavor packets, and unfortunately just a small “starter” carbonator.
As mentioned SodaStream dominate this industry and in this case, it is for a good reason, they simply produce the best product.
Justin Braun and Winter Park Seltzer want to bring a little sparkle to Central Florida.
Braun has started manufacturing a local line of seltzer water, hoping to bring the artisan movement to the sparkling water business. “It’s just the amount of care and attention that you want to put into a product,” said Braun, a local travel writer and Rollins College graduate. “We put an extra day into the carbonation process. We think that makes it’s a little better.”
Braun has two others helping with the project. They are starting with small batches of the Winter Park Seltzer brand. The seltzer is made with local tap water, which Braun said is high in minerals because of the aquifer its sourced from.
Somm wine at I-360
Wine bar Somm opened last week at the I-360 entertainment complex on International Drive.
The 1,200-square-foot bar has 60 varietals of wine by the bottle or glass, as well as craft beers and artisanal sodas.
Somm, short for sommelier, is run by the Concentrics Restaurants group, the same company that opened the Slate restaurant in Dr. Phillips last year.

Eats in Altamonte
Sus Hi Eatstation is rolling up and getting ready to start service at its second eatery this April, also joining new Mediterranean eatery Zoes Kitchen.
The two restaurants will be new additions at the West Town Corners shopping center in Altamonte Springs on S.R. 434, just south of S.R. 43They are expected to open in April.
Zoes Kitchen has one location in Winter Springs and is building another restaurant south of downtown Orlando.
Fast casual steak
An upstart restaurant group plans to open a “fast casual” Brazilian steakhouse on Orlando’s restaurant row.
Steak on Fire owners Andre Andreoli and Bruno Andreoli signed a lease for a spot at the Fountains at Bay Hill shopping center. “The idea is to provide two things Americans like, which is sandwiches and Brazilian steakhouses,” Bruno Andreoli said.
The restaurant at Sand Lake Road and Dr. Phillips Boulevard in Southwest Orlando could open as early as July, Andreaoli said.
The restaurant has about 2,050 square feet of space, according to NAI Realvest.
