How to Choose a Good Paint Brush

When buying brushes for acrylic painting, you can get both the stiff bristle brushes used by oil painters and synthetic brushes made for smooth watercolor painting. It all depends on the effect you want to obtain with your brushwork.

Stiffer brushes will leave visible marks on the painting, with more textural results. Softer brushes will give you smoother brushstrokes, with more blending.

For oils you need thicker bristles to move the dense and heavy paint around. For watercolors you need a softer brush because the medium is very fluid. Acrylic paints are softer than oils but thicker than watercolors, so your brushes can be somewhere in the middle.

Expensive Sable Brushes Are too Fancy for Acrylics

Even though natural bristle brushes created for oil paint can be used with acrylic paint, you may want to avoid expensive sable brushes.

When painting with acrylics you need to keep your brushes wet or immersed in water for a long time, so that the paint does not dry on the brush, and this excessive moisture can ruin the natural fibers quickly.

Bristles or Hairs

The part of the brush that holds and applies the paint. They can be natural or synthetic. Good quality brushes have firmly held bristles. It’s important that they don’t fall out while you are painting, for aesthetic reasons and because you may create messes on your painting when you try to remove them.

Usually made from metal, it connects the handle to the hairs, and keeps the bristles in shape. A good ferrule does not rust or come loose.

Paint Brush Sizes

The size of a brush is indicated by a number on the handle, and it refers to how thick the brush is at the heel, where the ferrule meets the hairs. Sizes vary from 000, 00, 0, 1, 2, etc.

Different manufacturers have different sizes for the same number, so if you buy supplies online, always refer to the measurement of the brush, not just the size number, especially if you are not familiar with the manufacturer.

How to read manufacturer measurements

Length: distance from the edge of the ferrule out to the tip of the hair in the brush’s center.

Diameter: distance across a round ferrule at the point where the ferrule ends and the hair begins.

Width: distance across a flat ferrule at the exact point where the ferrule ends and the hair begins.

A brush’s width is different from the width of the paint stroke that the brush makes. The actual width of the stroke varies according to the amount of pressure used, the angle at which the brush is held, the media used, and the flexibility of the brush hair.

The brush stroke will vary depending on how you hold your brushes too. Holding your brush close to the ferrule gives you most control, great for painting details; holding near the end gives you lose strokes.

When Choosing Brushes You Should Consider

Size – The rule of thumb about brush size is that big brushes should be used for large areas and loose brushwork, and small brushes should be used for small areas and details.

Shape – each shape delivers different stroke styles, and a different effect. Learning which shape to use to get the wanted effect is very important, and requires some experimenting. Have fun with it.

Material – Nylon brushes are best to lay flat paint areas, while natural bristles give a more uneven texture.

Stand mixer

A good stand mixer will make your baking (and cooking) life a lot easier. If you bake a lot and have been struggling with a low-grade mixer or a hand mixer, you might want to upgrade. A well-made stand mixer can produce loaves of rustic bread or moist cake layers, it can make quick work of whipping egg whites into meringue, and it can churn out dozens upon dozens of holiday cookies.

If you make a lot of cookies every year, investing in a classic KitchenAid stand mixer is worthwhile.

We believe that the KitchenAid Artisan is the best mixer for the home baker who’s looking for an equipment upgrade. After spending more than 1hours on research, consulting experts Anne Gordon of The Good Batch and Sarah Carey of Everyday Food, performing 30 hours of side-by-side testing on six stand mixers and two hand mixers, and conducting long-term testing for a year, we can definitively say that the brand that rolled out the first tabletop mixer in 191is still the best. Sometimes you really can’t beat a classic. The Artisan isn’t cheap, but since refurbished units are often available, we think this can be an affordable machine, and for the money, the KitchenAid Artisan can’t be beat in performance and versatility.

A budget strainer set

These are not as heavy-duty as the All-Clad models, but they cost much less. This is a great set for the occasional baker.

If you’d rather invest in just one high-quality strainer, Cook’s Illustrated likes the CIA Masters Collection Very Fine Mesh Strainer. According to Cook’s Illustrated, it “produced the smoothest sauce and silkiest pudding,” and its handle was strong enough to withstand being banged against the counter a few times.

One thing that multiple experts told us to avoid at all costs: old-fashioned, crank-operated flour sifters. Such tools don’t hold as much as a large strainer does, can’t strain anything besides dry ingredients like flour, and become difficult to clean, with the moving parts easily getting gummed up. As Matt Lewis put it, “They’re messy, they’re silly, and it’s a device you really don’t need in your kitchen.” —MP

The Ateco cookie cutters had the heaviest-gauge metal of any we tested.

The Ateco cookie cutters had the heaviest-gauge metal of any we tested, and the difference was immediately noticeable. Many metal cookie cutters are made of tin or tin-plated steel, which is often flimsy. The two tin-plated steel cutter sets we tested—the Wilton Holiday 18-Pc. Metal Cookie Cutter Set and the R & M Holiday Classics 12-Piece Cookie Cutter Tub—were easy to bend out of shape. The Ateco cutters, while not completely impossible to bend, were thicker and more resilient; they required significant force to bend even a little. The seam where the loop of the cutter was closed was also welded in more places than on the other metal cutters, making the Ateco designs less likely to break.

Tin-plated cutters are also more vulnerable to rust, and at least one of the R & M cutters showed signs of rust around the folded seam of its top edge after we hand-washed it just once and allowed it to air dry. The Ateco cutters, on the other hand, are still gleaming.

It’s also hard to find sets of copper cutters. One set we found, the relatively affordable Old River Road Holiday Cookie Cutter Set, was difficult to use. Getting the cookie dough out of the tiny details, like the reindeer antlers, was nearly impossible, and the cutters did not lie nearly as flat as any of the others we tested, so they didn’t cut all the way through in certain spots. If, as Dosik put it, there’s a cookie shape you “know you’re going to make religiously,” you may want to invest in a high-quality copper cutter. But for cookies you’ll make only once a year, the Ateco cutters are a better buy, and they can last you just as long.

The Ateco Christmas cutters are the smallest of all we tried, on average 2½ inches from end to end, as opposed to 3½ or inches, but this shouldn’t be a dealbreaker unless you have your heart set on cookies the size of your hand. If that’s the case, go for the snowflakes or for the Ateco 10-Piece Stainless Steel Star Cutter set, which have cutters ranging from 1½ inches to or 7½ inches, respectively.

CIA Masters Collection Cooling Rack

A cooling rack will help your cookies cool quickly and efficiently, so you can start decorating sooner. It’s also great if you’re drizzling your cookies with glaze or dipping them in chocolate, because the excess can drip off without pooling around the base of the cookie. Cheap, flimsy racks are common, but if you don’t have a rack already, you’ll find that a sturdy, oven-safe one has many uses beyond cooling baked goods, including cooking bacon in the oven or even making whole roasts.

The CIA Masters Collection Cooling Rack fits inside a half-sheet baking pan and has a third set of feet to brace the center of the rack.

After testing several cooking racks, we concluded that the 12-by-17-inch CIA Masters Collection Cooling Rack has just about everything we look for. It’s one of the few we’ve found that’s oven-safe and designed to fit well in a half-sheet baking pan. It’s sturdier than other racks we’ve looked at, and its tight grid pattern (as opposed to parallel wires) won’t let cookies bend or fall through. We also like that it has a third set of feet that run down the middle, bracing the center of the rack. Should you ever want to use the rack for something heavier, like a roast, or even some cakes, the third set of feet will prevent the rack from buckling in the middle.

Cook’s Illustrated names the CIA rack as the most highly recommended model. One thing to be wary of is that it’s made of chrome-plated steel, and some reviewers have complained of rusting. Rust is a common problem with cooling racks, which easily trap water in their corners—Matt Lewis told us he’s never had a rack that didn’t rust—and you can best avoid it by hand-washing and drying the rack every time.

Grill Friends Silicone Brush

Silicone brushes are the best thing to happen to barbecue since the charcoal briquet. I long ago relegated my natural and nylon bristle brushes to cleaning computer keyboards. Silicone brushes load up with lots of sauce, deliver it evenly, and are easy to clean and decontaminate. They are dishwasher safe. We have three: One for barbecue, one my wife uses for egg washes and other baking, and one for whatever. There are many brands on the market.

There are pros and cons to using a cover.

Pros. They keep rain, snow, wasps, birds, and other vermin out. If you have a shinyt stainless steel rig, it will keep it shinier. An expensive grill under cover will attract fewer thieves.

Cons. They are a bit of a pain because you have to wait til the grill cools and they gather rain when left off. But they can also trap moisture and humidity underneath and actually encourage rust and mold growth. For these reasons I cover only my grills and smokers that can collect water on the inside like my Weber Smokey Mountain, my Hasty Bake, and my pellet smoker (if the pellets ever melt and then dry out, getting your smoker up and running is an all day sucker).

Cheapo covers last only a year or two. A good cover will last five years or more. All the plastic or vinyl ones I’ve tried cracked and fell apart in two to three years. The canvas covers rotted in a few years. The best were canvas laminated or impregnated with polyurethane or PVC.

Weber’s Grill Pan Sears and Allows Smoke Through

Another favorite grill topper is the Weber Style Grill Pan, and I was pleased to see the folks at Cooks Illustrated agree. It has plenty of slots for smoke to travel through, and plenty of surface to brown things like salmon cakes.

Lodge Logic Pro Cast Iron Griddle Can Put a Gorgeous Sear on Salmon, Steak, or Use It For Pancakes And Eggs

You need a good cast iron griddle. Especially if you like fish, burgers, grilled sandwiches, home fries, or pancakes. Coat the flat side with oil, and you can sear fish so it is golden and crispy on the outside just like that great pan-seared fish you get in restaurants. Throw some dried herbs onto the flame, and you’ll get a whisp of smoke in the meat.

You can even bring it indoors and it will straddle two burners. Use the flat side for pancakes. Flip it over and you get grill marks and conduction cooking from the ridges on steaks, burgers, or asparagus, and the fats and juices drip into the grooves where they vaporize and flavor the meat and cook by radiation.

This is a very handy tool. One word of caution. You may need two. If you use it for fish a lot, the flavor will remain on the surface, even after cleaning, so you won’t be able to use it for pancakes.

I have two of them by Lodge, known for quality cast iron, and I use the ridged sides of both, one on top and one on the bottom, for making paninis. And my spatchcocked (butterflied) Cornish game hens pressed between the flat sides are unbelievably crisp and juicy in only 20 minutes. It is 20″ x 7/16″.

These flat weights are great for making grilled cheese sandwiches and other paninis, and even bacon. When I make sandwiches I preheat the press on high on the side burner, and then put the sandwich on the grill grates and the hot press on top so I can cook both sides at once. You can use them for keeping bacon from curling up on the grill with these, too. The Lodge model is preseasoned. Although the handle is supposed to provide heat protection, wear a glove.

Thermoworks Timestick Is The Best Cook’s Stopwatch And Alarm

I keep a cooking diary. In it I write down vital info about every cook so I can learn what works and what doesn’t. OK. So I’m anal. But being anal got me this gig. The two most important variables to track in any cook are time and temp. So I used to wear a stopwatch around my neck when I cooked. Click when I fire up. Click when it is up to temp. Click when the meat goes on. Click when I add more wood or charcoal. Click when I turn. Click when I sauce. Click when I take it off. But have you seen the new digital stopwatches? They are a real pain with faaaar too many features and bells and whistles. My last one sat in my desk between cooks and beeped every hour and the only way I could make it shut up was with a hammer. True story. Now I use the very sinple user friendly Timestick.

It can count down or up and when a count down alarm sounds, the count up timer starts so you can see how much time has elapsed since your alarm. It’s range is 9hours 9minutes and 9seconds, there is a keypad lock so you don’t accidentally screw things up, there’s a lanyard so you can wear it around your neck, it comes in nine colors, it’s splash proof, and it has a magnet on back so I can stick it to my grill, fridge, or oven. Operates between 3and 104°F. Best of all, you won’t need to read the manual. Love it.

Knob Where You Need It Makes Grilling Safer And Easier

You’re supposed to turn off the propane tank between cooks to prevent expensive leaks and more expensive explosions. But many grills don’t have easy access to the tanks, and it sure is easy to forget. Knob Where You Need It makes it easy to turn off the gas and easy ti remember. There are no instructions in the box so you need to go to their website. I suggest printing them. Installation is easy for most people (I made a dumb mistake). Please note: You need to drill a 1/2″ hole in your grill. Watch the video below to see the installation process. –

Chimney Cap

Most kamado smokers have an airflow control/chimney at the top that is very good at controlling the oven temp. They have one innate flaw: When it rains, water gets into the cooking chamber! If you have a Big Green Egg, Primo, or Kamado Joe, or any other leaky kamado, here’s the solution. Made from aluminum, it is simple and effective.

FoodSaver Vacuum Sealer

The best way to store food more than a week is in the freezer. Foods lose few nutirents and little quality when frozen. But if they are kept for longer than a few weeks, meats can oxidize, fats can get rancid, and the surface can harden from freezer burn. Especially pork and seafood. Oxygen is the enemy. So I pack food for storage is with a vacuum sealer like the FoodSaver Vacuum Sealer. You put the food in a plastic bag, insert it into the machine and it sucks out the air and seals the bag. Make sure you mark the date on the bag. It is a great way to store cooked foods too. Put your pulled pork in the bag, add a little sauce and seal. When it is time to serve, place the bag into a pot of simmering water. It reheats rapidly and tastes almost as good as when it came out of the smoker.

Grill Grabber

Use a Grill Grabber to lift your hot and dirty grill grates, even if there’s the food still on them. I use mine when I need to add coals, wood, water to water pans, or to rescue food that has dropped through the grates. This may seem like a frivolity, but it is a thoroughly useful tool.

OXO Good Grips Tongs

Dishwasher safe stainless steel with OXO’s popular nonslip rubber handles, they are the winner of the Tylenol/Arthritis Foundation Design Award. They are spring loaded and the ends are scalloped for better gripping. There is a loop for hanging and a mechanism that locks them in closed position for storing (which has failed after several years on all three pairs that I have). Regardless, they are still my faves. I just store them with a cardboard toilet paper core over the ends.

The 18″ tongs don’t have the locking mechanism, but they are necessary if you have a deep pit. But be warned, the longer the tongs, the less leverage you have and the harder it is to get a grip. I also recommend their nylon tipped tongs for use on non-stick cookware.

LamsonSharp Fish Tongs

A jumbo hybrid of tongs and spatulas, this is the proper tool for flipping fish, burgers, and other crumbly foods. Rosewood handle protects you against the heat, and there is a leather loop for hanging. They come with a lifetime warranty. I find them to be indispensable.

Stiff Metal Spatula

Spatulae come in slotted and solid, and I recommend the solid with a good insulated sturdy handle. The solid is best for pressing things down on a griddle, like when you are making Diner Burgers on a griddle or in a frying pan. I like the Weber Style 644Professional-Grade Fish Turner.

I took mine down to the basement and ground the edge very sharp with a grinder. Now it slips easily under food that is stuck to the grates.

Double Pie Iron

Here’s how to make two perfectly toasted panini style grilled sandwiches at once. Use this old fashioned double pie iron, originally designed for filled pies, for everything from Grilled Cheese to Pulled Pork.

Just butter your sandwich on the outside, open up the hinged mold, insert the sandwiches and put it over the coals, campfire, or gas grill. This Old Mountain cast iron double square pie iron is 1/2″ x 1/4″ and is pre-seasoned and ready to use. The long handle allows you to grill in comfort away from a camp fire. – Meathead

My wife hasn’t noticed the burn hole yet. It’s pretty substantial. For the life of me I don’t understand why the deck didn’t go up in flames and take the house with it. Must be some sort of flame retardant in the wood. But a hunk of charcoal somehow jumped from my grill and tried to escape before I caught it. Forget the fancy high end pricey Le Cruset French Oven, this is the one you want for cowboy cooking and camping, and it comes in handy around the house. It’s perfect for whole chickens or slow braising in the oven or in the grill.

You can even sit it on top of coals and shovel more coals on top of the flat lid with a raised rim, and you can cook classic chili, baked beans, cornbread, casseroles, and even cobblers. Kitchen shears

You want good stiff scissors for cutting a chicken apart, for snipping herbs, cutting pizza, butcher string, opening packages, and many other tasks. Get sturdy stainless blades so you can cut through the ribs of chickens. The best models come apart at the hinge so they can go in the dishwasher and you can get them really clean.

Garlic press

When a recipe calls for garlic to be crushed, minced, or pressed, I use a garlic press. A good garlic press releases more oils and flavors than mincing with a knife and pressed garlic coats the food more evenly than mincing.

A good garlic press is an important kitchen tool. Get one that is sturdily built, that is easy to grip, that is easy to clean, and has a large hopper to hold big cloves. Avoid non-stick models. I have a well-used Trudeau Garlic Press

Digital kitchen scale

I don’t know how I lived without a good, accurate digital kitchen scale for so many years. It is so important. Look at salt for example, cup of table salt has almost twice as much salinity as a cup of Morton’s kosher salt because Morton’s kosher salt has more air space between the grains. But a pound of all salts contain exactly the same amount of sodium chloride.

Without a scale, making a brine requires a calculator. Flour and sugar have the same problem. Packed brown sugar or loose brown sugar. Big diff. Ever try to measure a tablespoon of honey? Did you get it all into the bowl or leave a lot of it on the spoon. There are plenty of conversion tables out there that help you convert. My favorite is the OXO Good Grips Stainless Food Scale with Pull-Out Display.

It can weight accurately up to 1pounds as well as fractions of an ounce. Push a button and it converts to metric. Put the bowl on the scale and push a button and it zeros out so the bowl’s weight is not included. The top comes off for easy cleaning. It will significantly improve your cooking.

Now here’s one of those slap your forehead and mumble “why didn’t I think of that” ideas.

Grandma’s Secret Spot Remover

I first heard about this from a competition cook. To say I was skeptical is an understatement. A spot remover that will remove the grease stains on almost all my shirts is something I considered to be as elusive as unicorns and perpetual motion machines. So I bought a ounce bottle and tried it on one of my t-shirts.

The instructions say that all you need is just a drop. Sure. I used three drops. My shirt came out so clean I could not find where the stain had been originally. So I tried it on a dress shirt, but fearful it would ruin it, I used only one drop. Again, the grease was gone! So I hauled out all my saucy and greasy shirt, 1in all, put Grandma to work, tossed them all into one tub, and before long, I had a new wardrobe. Utterly amazing stuff. And just for the record, I have been doing my own laundry since I went away to college, even through 40 years of marriage. May be a contributing factor to our longevity.

Even my wife is impressed with Grandma. She has used it on some of her finery including her Mom’s table cloth with ancient spaghetti stains, stains that Oxi-Clean, her go to remover, couldn’t handle.

The label says it is good for “oil, grease, paint, makeup, grass, inks, blood, baby formula, tar, spaghetti sauce, coffee, rust, beadine, tumeric, fabric bleed, and pet stains”. The only caveat on the label is to “check garment for colorfastness.”

Shop all combination microwaves

A standard microwave which can also work like a convection oven but with quicker cooking times. It can heat, roast, brown and crisp food allowing you to use it the same way you would your standard oven. Yes, that does also mean you can cook a roast dinner in it (if you get a big enough size).

The power of a microwave is measured in watts. The more watts a microwave has, the faster it can cook.

Food processor

Food processors are generally quite large in size but smaller than a stand mixer, and are available in different size capacities. They’re easy to use: simply feed food through the opening at the top of the machine and choose your speed setting.

Ideal for: chopping and slicing vegetables, particularly into small pieces for soups and sauces. A stand mixer may be more suitable if you’re looking to buy an appliance for mainly baking tasks.

Hand blender

Basic, cheaper hand blenders will only include the chopping blade while more advanced models may come with attachments for tasks such as whisking, chopping and mashing.

Ideal for: blending soup, sauces, smoothies and baby food. Whisk attachment can be used for whipping cream and beating egg while chopper blades are useful for shredding herbs, garlic, vegetables and nuts. Smaller than food processors and greater control when blending.

Hand mixer

A hand mixer is a compact handheld appliance for mixing, whipping or whisking. It features twin beaters, and sometimes a dough hook and balloon whisk, which rotate to blend, stir, knead and whip ingredients.

They’re usually quite lightweight, easy to store away and relatively inexpensive compared to stand mixers.

Ideal for: gentle baking jobs like whipping cream, whisking egg whites and blending cake ingredients.

Jug blender and smoothie maker

Some blenders have a larger capacity, around 1.5-litres, making them an ideal choice for families. Personal blenders feature a smaller blending jug for one or two portions, which can also be used as a drinking cup when you’re on-the-go. These blenders may also have the ability to blend seeds, nuts and stalks as well as crushing ice.

Prices differ depending on power, speed and material and typically range from £20-£300. Plastic jugs are lighter for lifting and storing away, whilst glass jugs are heavier, more solid and less likely to get scratched. Blenders and smoothie makers take up less room than food processors and are generally easy to store away, if you don’t want to keep it on show.

Cast Iron Cooker

Why it’s a bakery essential: Baking in a pot is hands down our favorite method for making bread in a home oven. The pot’s base and lid create a tightly enclosed environment for the proofed and scored dough. Cast iron absorbs heat well and retains it even better, helping to mitigate the temperature drop when you open the oven door.

Features to look for: When it comes to these pots, you don’t have to spend an exorbitant amount. We’ve tested a lot of cookware, but our favorite is the simple cast-iron combo cooker. You can bake extraordinary bread at home with this inexpensive, multipurpose pot. The cooker actually is a two-piece set that consists of a Dutch oven and a skillet that is repurposed as a lid. For bread, we use the skillet as the base and the Dutch oven as the lid, which makes transferring dough less complicated. We find that 800 g of dough fits perfectly in most three-quart cast-iron combination cookers.

Plastic tubs

Why it’s a bakery essential: Storage is an important consideration for bakers, and clear plastic tubs are the storage bins of choice. Up for almost any stowage task, these bins come in a range of sizes; they make it easy to keep an eye on the contents inside; and they stack much like nesting dolls when they aren’t being used. Long rectangular storage boxes can be used to hold fermenting dough, while preferments, ingredients, and old dough are often stored in square versions. Tall tubs make great vessels when weighing large quantities of water—some can even transform into water bath containers when cooking sous vide.

Features to look for: Clear plastic bins with airtight lids are useful to have in a variety of sizes. The Cambro brand is so habitually used that the name is practically a generic term for the tubs in professional kitchens. Another kitchen vocabulary word to know is ‘lexan’, which is another name for the durable polycarbonate sheets that are often used to make commercial storage boxes, pans, and containers for food.

Plastic bags or tarps

Why it’s a bakery essential: They may not make the most exciting gift, but plastic bags and tarps are essential tools for bakers. They’re used to cover dough to keep it from drying out as it rests on a worktable.

Features to look for: More likely than not, you already have suitable covers in your pantry. Clean trash bags work, however we prefer eco-friendly transparent compostable bags.

Thermometer

Why it’s a bakery essential: Digital thermometers are indispensable tools, and any baker will benefit from having one in their pocket. Small changes in temperature can make all the difference in cooking and baking, which is why we measure it as accurately as possible. A good digital thermometer can be used to improvise a water bath to cook sous vide, and you can also calibrate your home oven with an oven-safe probe.

Features to look for: One of our favorite digital thermometers is the Thermapen MkIt’s extremely accurate, has a slender probe, and can connect to a Type K Thermocouple. Home bakers will also want a basic oven thermometer.

Digital Scale

Why it’s a bakery essential: This is the piece of equipment we recommend most emphatically for all bakers. If you have been measuring ingredients only by the cup and teaspoon, now is a great time to buy a good scale to begin applying more precision to your recipe measurements. Some high-capacity kitchen scales display baker’s percentages as well as grams, which is another benefit. A super-precise fine weight scale is the best way to measure tiny quantities of ingredients like yeast or salt.

Features to look for: Bakers should really have two scales: a relatively high-capacity kitchen scale and a fine weight pocket scale for measuring small quantities. The standard scale should be accurate to one decimal place and should have the capacity to weigh double the amount of our standard recipes plus the weight of the mixing bowl. For larger quantities of dough, look for scales that can hold even more weight. The fine weight scale should be accurate to.0g. If you don’t want to spend a lot, an inexpensive 200 g pocket-sized version will work just fine. All-purpose scales exist that will cover both these requirements, but they are expensive.

Timers

Why it’s a bakery essential: Baking bread is a time-intensive process that also requires time management skills. In addition to telling you when to remove your bread from the oven, digital timers will help you keep track of dough as it ferments and proofs, especially when you’re managing several doughs and kitchen tasks at a time.

Features to look for: Timers should be easy to use, with loud alarms that can be heard across a noisy bakery or from another room. Have several basic timers on hand for juggling tasks.

Lame

Why it’s a bakery essential: Our go-to tool for scoring dough is a classic: the lame. A lame is a sharp razor blade held in place by a handle. The blades are cheap and can be replaced easily, which isn’t necessarily true of other cutting tools, such as a paring knife.

Features to look for: Lames come in several styles. Basic lame handles are often made from metal or plastic. Look for razor blades that are thin and flexible as many lames are designed to make the blade curve. Disposable versions have a blade that can’t be removed or sharpened. Professional bakers generally avoid disposable lames because they need to replace the lame blades often (usually at the end of the day). A wood-handled lame is an attractive showpiece with a heft that makes it easier for the blade to slice the dough. The drawback is that it can be pricey and can’t make a razor blade curve.
